Cloak & Dagger was born from a simple mission: to prove Australian sugarcane could stand tall without tricks or spices. We wanted a spirit that spoke for itself—no hiding behind vanilla or cinnamon, just the raw charm of molasses, oak, and time (just not quite enough time to call it rum, legally). The name? A wink to its deceptive smoothness and our distillery's rebellious streak. Drink it how you like: the owner reaches for ice, but we won't judge if you drown it in cola.

Surrounded by sugarcane fields, we tapped local blackstrap molasses and blended it with raw sugar, recreating the rustic fermentations of old-world rum. No dunder pits, no filters—just slow distillation in our copper still and patience in American oak until the spirit told us it was ready. Early experiments chased bigger, brasher flavors, but we learned restraint lets the ingredients shine: a well-crafted ferment, a kiss of caramel from the barrels, and a cut of Rebellion's defiance in every bottle.
