Our name pays tribute to Australia's only military coup - sparked by the fight for rum. We carry that rebellious spirit forward, doing for rum what modern gin did: elevating the category with creativity and craft.

1.Local Sugarcane Sourcing

We source our sugarcane exclusively from trusted farms in Jacobs Well and Toowoomba. Growing up in Cairns surrounded by sugar cane farms inspired our founder Ryan's passion for rum-making. Our local partnerships ensure the highest quality while supporting Queensland farming communities.

2.Molasses Creation

The harvested sugarcane is crushed to extract its sweet juice, which is then boiled down to create molasses. This thick, dark syrup contains the rich flavors that will eventually define our rum's character. We add unfiltered honey from local Queensland hives to enhance complexity.

3.Precision Fermentation

We add our proprietary blend of yeasts to the molasses and water mixture. During fermentation, which takes 48-72 hours, the yeasts convert sugars into alcohol, creating what we call "rum wash" - the foundation of our spirits. Ryan's IT background helps us monitor and optimize this process with modern technology.

4.Flexible Distillation

Our innovative still allows us to switch between traditional copper pot still and column still configurations. This dual approach - a perfect blend of old and new - allows us to produce a wide range of flavor profiles, from light and crisp to rich and complex, all while maintaining our artisanal standards.

5.Sustainable Aging

The clear distillate is transferred to ex-Jack Daniels American oak barrels for aging. Our barrels impart vanilla and caramel notes while our aging warehouse allows the product to breathe with Queensland's temperature and humidity swings, creating our unique flavor profile. We're proud of our 87% bottle return rate - a record 100 bottles returned by one customer!

His "aha!" moment came when filling a 1,000L tank for the first time, realizing the physical challenges of scaling up from hobby to commercial production.
